Developed techniques and technology for drying the tubers of jerusalem artichoke and rose hips for the purpose of obtain the final product with the preservation of biologically active substances. The results in theory and experimental studies on the dried tubers of jerusalem artichoke and rose hips. The analysis of the drying process a superimposed vibration energy and without the infrared field and the presence of vacuum, indicating that significant energy savings. Implementation of research results in the industry has allowed to obtain confirmation of the effectiveness of the technological process of drying the tubers of jerusalem artichoke and rose hips.
