Mycotoxins are secondary metabolites of molds that have adverse effects on humans, animals, and crops that result in illnesses and economic losses. The worldwide contamination of foods and feeds with mycotoxins is a significant problem. Zearalenone, Ochratoxin A, Deoxynivalenol, T-2 toxin and Aflatoxin B1 are the mycotoxins of greatest agroeconomic importance. Cereals represent one of the most important dietary items around the world and are very susceptible to fungal attacks while in the field and during storage. In this book, occurrence of five mycotoxins in cereal and cereal products will be reviewed and discussed.
