Hepatocellular carcinoma (HCC) incidence is rising at alarming rates especially in developing countries. Dietary exposure to aflatoxin B1 is among the major HCC risk factors as a genotoxic hepatocarcinogen. Despite several research and control measures, aflatoxin is still a major threat to food and agricultural commodities. Prevention of aflatoxin B1 requires an integrated network collaboration of different sectors, including public health, agricultural departments and mass media in order to minimize the food contamination by aflatoxin B1. This book focuses on resources, production, detection and control measures of aflatoxins to ensure food and feed safety. The book is informative for healthconscious consumers and research experts in the fields. Furthermore, providing knowledge on aflatoxins toxicity will help in ensure food safety and meet the future demands of the increasing population by decreasing the incidence of HCC due to aflatoxin B1.

Dr. Manal M. E. Ahmed was born in Cairo - Egypt. She studied vet. medical sciences at Cairo University where she successfully completed Ph. D degree. She worked over almost 25 years in the field of microbiology and immunology. Her main interest is innovating novel immunological tools for the pharmaceutical and diagnostic industries.
