The book deals with methodology for isolation of best enzyme producing microbial strain and optimization of production media for maximum enzyme yield. Pectinase is one of the most commercially utilized enzyme in food and beverages industry. But the cost of microbial enzyme production is too much high, mainly because of involvement of high cost raw material in production. By using safe agro-waste material as substrate production cost could be minimized.

Mr. Ankit Paliwal has done M.Tech in Food Technology & Biochemical Engineering from Jadavpur University, Kolkata and graduation in Biotechnology from M.I.T.S. Gwalior. Currently working at Amity University, Noida as Assistant Professor. He has more than a year experience in brewing industry & more than 4 years experience in academics and research.
