Organic acids have many applications in the food, beverage, pharmaceutical, chemical, and textile industries. Traditionally, organic acids are produced energy-intensive chemical processes. Fermentative production of organic acids is environmentally friendly and cost-effective approaches for large scale production of enzymes utilizes organic waste feedstocks. This book provides the recent research on microbial production of organic acids.
