Each enzyme, protein and non-protein molecule has a comprehensive description. Tables summarize common foods with the most antioxidants effects and biomarkers of oxidative stress are added as appendixes.

Dr. Jalal Soubye. He obtained Master in pharmacy and a Postgraduate diploma in clinical and biological chemistry from Damascus University (Syria). He finished his PhD in Biomedical and Pharmaceutical Sciences (Medicinal Chemistry) at Free University of Brussels. Now he is an academic researcher in Medicinal Chemistry in Free University of Brussels.
