Beschreibung
ß- glactosidase very important enzyme for many people allover the world specially children for overcoming lactose intolerance problem. Lactose of milk cant be break down in small intestine into glucose and galactose in people lacking ß -glactosidase enzyme. This led to irritation of the intestinal mucosa and giving rise to cramps, flatulence and diarrhea. In addition the enzyme has many applications in dairy industry.

Prof. Dr. Hussein Azzaz Murad studied continuous cultivation of microorganisms in the Institute of Microbiology, Prague Czechoslovakia before obtaining his Ph.D. in Food Microbiology from Zagazig University, Egypt. He is Professor of Food Microbiology in National Research Center, Egypt.
