Probiotics are live microorganisms that are either the same as or similar to microorganisms found naturally in the human body and may be beneficial to health. Also referred to as good bacteria or helpful bacteria,.The biggest challenge in the development of probiotic products is to maintain the adequate number of viable cells during the shelf life of the product as well as during the gastrointestinal tract transit after consumption, so that the claimed health benefits can be delivered to the consumer. Microencapsulation is an approach currently receiving considerable interest & providing physical barrier to probiotic living cells against adverse environmental conditions. It also appears to be a promising technology to retain the potency of probiotic bacteria or other live bacterial cells to be delivered orally into the GI system in terms of therapeutic means.
